Banana Breadie Puddin

Playing around with banana bread recipes. I already had a pretty good one, but wanted to cut some things out.

I call this banana breadie puddin. Why? Well once it is out of the oven the insides remind me of a bread with puddingish squish qualities. Overall it is yum yum in the tum tum.

Makes 1 loaf of nut and dairy free goodness

5 large over-ripe bananas

1cup oat flour (I make my own but you can buy for pretty cheap)

1 cup brown rice or buckwheat flour (I used brown rice)

½ cup maple syrup (I use dark amber because it is my fav)

3 tablespoons of chia seeds

1 tablespoon cinnamon

Optional: dairy, nut, soy free mini chocolate chips ¼ cup

Preheat oven 350F

You can use a mixer or food processor to blend everything. You want it smooth with no chunk.

I throw all the dry ingredients in then pour in wet. The banana I squish the peel so the insides pop out into the mixer while it is mixing.

If using food processor you can just throw everything in at once. In mixer to get ride of chunk you need to kick the speed up to high.

Once everything is added it should be nice and sticky.

I gave the mixture a good folding with my spatula before putting into tin. Wanted to make sure none of the flours got pressed to the bottom of the bowl.

Greese a loaf tin with coconut oil. I use parchment paper so I skip the greeze the loaf pan.

Dump into tin.

Bake for about an hour.

Let it cool.

My little brother is visiting. He claimed offical taste testing. So this is kid tested. He said yum. My husband agreed.

I am sure you could throw in other things to. Raisins?
