My salad all put together. introducing my second sweet basil plant.
Salad is all the items from my last post put together.
½ cup cherry tomatoes sliced
2-3 cups chopped kale. I have learned that people struggle with kale. I love it but don’t like spinach. By chopping up into tiny thin pieces I have notice people don’t notice the kale as much. I don’t get it. It also reduces the room it takes up in your bowl. Helpful when you don’t want to walk around with a giant pyrex bowl
½ cup green grapes sliced
½ cucumber diced
2 carrots diced
5 pitted dates sliced. dates are gooey so be playful with how up chop them up.
5-6 leaves of sweet basil. Thin chop. I lay the leaves on top of each other as best as possible. Fold left to right then top to bottom. Slice.

Dressing
1 1/2 tbs dijon mustard
½ tbs local raw honey (or to taste sometimes it is 1 tbs)
1/4cup apple cider vinegar
juice of ½ lime

you increase things depending on how big your salad is.
Drizzle the dressing over with spoon. Helps with even distribution. I let the salad sit for a bit. In that time I usually take out my compost that was created from my fruits and veggies during the day.

This would taste good also with green apples if you don’t like grapes. I would not put berries in here if using the Dijon. You can take out the Dijon. Lime honey mix is pretty good with berries. I would cut down on the vinegar or switch it out with cold pressed extra virgin olive oil. Dates could be replaced with golden raisins. Basil you can replace with some dill.
